I have a 79 CX500 with bent handlebars. I was wondering if you could use Custom or Deluxe handlebars from the same year or some handlebars from a different year and model without having to change throttle cables, brake cables, etc.

yes and no

I dont think I've ever use std bars on a CX

My first CX had bars from a Kawasaki I think which as they were only slightly higher

meant I could use std cables

Higher wider bars means you'll need to use longer throttle and clutch cables

I have pattern customish bars on the mongrel and just buy custom cables

The Custom bikes usually have a long pull back bars and they also have tilted master cylinders

to keep the fluid level so you may want to consider this when selecting your new

7/8 22mm bars.

Also if you have the STD nacelle and wiring and you want to fit high bars

you may struggle to fit the electrical cables/connectors in their usual place

All these things are quite doable but its best to measure and consider whats involved

before starting.

You should be Ok with the choke cable though !

If you don't want to change the throttle cables and other the best solution is to replace with the same type. But all 7/8 bars will fit the bike and with the exception of ape hangers the stock cables will do fine. It's not really about replacing the cables but possibly rerouting them to where they work better.
