After trying 'everything' the 5000rpm stumble turned out to be caused by a loose low tension connection to my new coils OR the fact that I have iridium plugs with resistors in.
I finally fixed the problem by soldering the wires properly and fitting a pair of old drea8 plugs.
No more stumble around 5000rpm when on the road, loads of power through the range.

Once it was all working well again, I when out and got a new battery

For about 30 seconds, she is reluctant to rev up - tends to die if I try - but then all is well and can rev up to whatever I want. Also, the choke only increase revs to just over 2000 - I'm sure it used to be closer to 3000... but she's been like this for a while.
My next task is to figure this out.... but I'm not worried about it too much!
